When there is nothing in the house, and you still have to make dinner… make these! Most of these ingredients are hiding in your pantry right now!
Mexican Chicken Stacks
2 chicken breast
taco seasoning blend*
1/2 tbsp cornstarch (dissolved in a splash of cold water)
3/4 cup crushed tortilla chips
1 egg
1/2 tbsp melted butter
1/2 cup shredded cheese
1 can refried beans
1 tomato, sliced
shredded lettuce
Simmer the chicken breast, covered, in 1 cup of water plus the taco seasoning blend. In the mean time, crush your tortilla chips in a food processor or blender, and mix in a bowl with the shredded cheese. Beat the egg and add it to the chips along with the melted butter. Mix well and then divide the chip mixture into 4 patties and cook in a skillet till browned on each side. When the chicken is tender, simmered for at least an hour, shred it with a fork and return it to the seasoned water. You could add your favorite hot sauce to spice it up a bit. Continue to simmer and thicken the sauce with cornstarch.
Spread the tortilla chip patties with the refried beans, and top with a tomato slice. Then drop a heaping spoon of the chicken on top and sprinkle with shredded lettuce. Serve with sour cream or salsa!
taco seasoning blend* usually a blend of chili powder, cumin, onion & garlic powder, and cayenne. If you don’t have a home made blend, it’s a great thing to have on hand! Or, you could always use one of those store bought packets of taco seasoning.
