After all of the past weeks dessert making… I had a ton of leftover eggs, and not so much motivation to cook… So what’s for dinner?!  Quiche!  So easy, so delicious.  Who doesn’t love breakfast for dinner?!

Crustless Quiche

7 eggs

1/4 cup water

7-8 slices of bacon, cooked and chopped (I used turkey bacon)

2 roma tomatos, chopped

1/4 cup red onion, chopped

3-4 fresh basil leaves, thinly chopped

4 slices swiss cheese, chopped

salt & pepper

Whisk the eggs with the water and pour into a pie pan sprayed with nonstick cooking spray. Sprinkle the remaining ingredients into the eggs and bake at 350 for 30 minutes or until a toothpick inserted in the middle comes out clean.

While your waiting, work on the potatoes!

Smokey Potatoes

5 small red potatoes

3 tbsp butter

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 tsp chili powder

1/2 tsp cumin

salt & pepper

Slice each potato in half, lengthwise, and lay the flat side on the cutting board.  Thinly slice vertically, then thinly slice the opposite direction.  Melt the butter in a saucepan over medium high heat, and add the potatoes.  Sprinkle all the seasoning over the potatoes, and toss to coat evenly. Cover the saucepan, and lowed heat to medium.  Check every couple minutes, and stir potatoes, so that they don’t stick to the bottom of the pan.  Continue to cook till tender.  Serve with a dollop of sour cream!
