Grapefruit are in season and here in California they are huge!  We have a white grapefruit tree, full of huge, delicious fruit, but white grapefruit tends to be a bit more bitter than pink, and we wanted a sweet sorbet.

If you aren’t a wine drinker, you could substitute with ginger ale and I promise it will be delicious!  Add a couple sliced strawberries on the side or a dollop of fresh whipped cream!

Grapefruit Riesling Sorbet

2 1/2 cups fresh pink grapefruit juice

1/2 cup riesling wine

3/4 cup sugar

Bring the wine, sugar, and 1 cup of the grapefruit juice to a boil.  Add to the remaining grapefruit juice and transfer to an ice bath.  I reserved some of the pulp and mixed it in at this point!  Once cooled, chill in the refrigerator for at least 1 hour.  Then freeze according to your ice cream makers instructions.
