You know when someone else is deep frying something, and you just have to deep fry something too?! Well, that happened. The fryer was already set up on the counter with a bunch of fresh oil poured in, and it was calling my name. Dinner was already made, so what kind of fried dessert could I whip up in a jiffy?! Funnel cake! If you’ve ever eaten it, just reading this is creating an insatiable craving!
You don’t need a traditional deep fryer, you can use one of those plug in skillets with the 3 inch side, or even a deep skillet on the stove top. And you don’t need a piping bag, or an actual funnel. You can use a zip lock bag. If you want funnel cake bad enough, you will learn to improvise!
1/4 cup sugar
1 tsp vanilla
2 cups milk
3 1/2 cups flour
1/2 tsp salt
2 tsp baking powder
In a mixing bowl, beat the eggs, sugar, and vanilla. Then slowly pour in the milk. Sift together the dry ingredients, and slowly incorporate them till a runny dough forms. You could pour the batter into a funnel, and plug the bottom with your finger. You could also pour the batter into a piping bag. Or, pour it into a zip lock bag and cut the tip off a corner.
Heat at least 2 inches deep of oil, in your chosen frying vessel. (stove top skillet, plug in skillet, or actual deep fryer) Pour the batter into the hot oil, creating whatever design you want, making sure to keep the sections of dough connected. When the dough turns golden brown, remove the cake and let drain over paper towels. You can top with sifted powdered sugar, honey & cinnamon sugar, chocolate sauce, whip cream, peanut butter… literally whatever you want!
