You all know that I have this amazing white grapefruit tree that literally begs me to use it’s fruit…  so I am.  Desserts are a favorite in our home, and my husband and I rarely pass on them, which makes it difficult to diet.  The current diet is “low carb”.  These cakes have about 10 carbs, give or take, and they are so delicious.  I used Stevia to sweeten, you could always use real sugar if your not dieting.

White Grapefruit Fluff Cakes

1 cup stevia, or sugar (divided)

1/3 cup flour

1/8 tsp salt

1 cup low fat milk, or regular

2 tsp white grapefruit zest

1/2 cup white grapefruit juice

2 tbsp melted butter

1/2 tsp vanilla

3 eggs, separated

Whisk 3/4 cup stevia, flour and salt.  Then add the milk, juice, zest, butter, yolks and vanilla and whisk till smooth.  In a separate bowl, whisk the egg whites till medium peaks form and add the remaining 1/4 cup stevia, whisking till stiff.  Fold the whites into the grapefruit mixture till combined. Pour into 5 ramekins, sprayed with a nonstick spray.  Bake in a water bath at 350 for 20 minutes.

 

The tops will turn golden and crack a little.  Remove and allow to cool on a wire rack.  They will look puffy, but will shrink down as they cool.  Turn upside down onto a dessert plate and serve!
