I know what your thinking… what are spam, avocado and brazil nuts doing together?! Haha, yeah… well I think most people would agree that they don’t belong together, but these were the top voted for ingredients in my Chopped appetizer round. So, I had to deal with it! It was so fun trying to create a tasty appetizer, highlighting the mystery ingredients. I can’t wait to do the entree round!
1 avocado (ripened)
2 1/2 cups flour
1/2 tsp salt
Chop the avocado into small pieces and place in a bowl with the eggs. With an electric mixer, beat until smooth. Try to get all the little lumps out. Sift the flour and salt into a kitchen aid mixer. Pour the avocado mixture in and combine till a stiff dough forms. Roll out onto a floured surface, or if you have a pasta roller, feel free to use it! Once its nice and thin, cut the dough into circles.
Brush the inside of each circle with water. Plop a small spoonful of the spam filling, in the center of one circle. Cover with the other circle and press the edges together with your fingers. If you need to trim the rough edges off, just re cut with a glass. Using the tines of a fork, seal each ravioli around the edge and set aside till ready to fry.
In a deep fryer heated to 350 degrees (or oil heated in a skillet), drop each ravioli and fry till bubbly and golden on the outside. Remove and drain on paper towels.
1 can original spam
8 ounces softened cream cheese
1/2 cup shredded smoked gouda cheese
1/4 cup chopped green onion
1/2 tsp garlic powder
1/4 tsp cumin
1/4 tsp smoked paprika
Chop all but 1/4 of the can of spam, into small cubes. Cook in a skillet over medium high heat till browned. Transfer into a bowl with the remaining ingredients and stir to combine. You can thinly slice the remaining 1/4 can of spam, and deep fry into “chips” for a crunchy garnish!
Brazil Nut Pesto
1/4 cup chopped brazil nuts
1 tbsp chopped fresh garlic
2 cups fresh basil leaves
3/4 cup olive oil
1/2 cup grated parmesan
salt and pepper to taste
Combine the nuts and garlic in a food processor or blender. Roughly chop the basil and add it to the food processor and blend. In a slow steady stream, add the olive oil while blending. Once all the oil is incorporated, add the cheese, salt and pepper and pulse a few more time, just to incorporate.
Plate the fried ravioli with a drizzle of the pesto, and a spam chip on top! Feel free to “judge” this round with your comments!
