A quiche is a perfect way to use up leftovers, and call it something sophisticated when your done! So once again, I found myself with not a lot of cohesive ingredients in my house and dinner still needed to be made! The thing to remember is that you need about 6-7 eggs to fill a pie pan, depending on how many mix-ins you add. The mix-ins can be just about anything! Oh yeah, there is no need for a crust, so we just made this a Low Carb, Left Overs Quiche!

So, in my case, I was working with cooked and crumbled sausage, diced tomatoes, green onion and feta cheese. After spraying the pie pan with nonstick spray, sprinkle in the meat and tomatoes. Beat the eggs with a splash of water, salt and pepper. Then stir in the feta and green onion. Pour the egg mix over the sausage and tomatoes and bake at 350 for about 45 minutes or till a toothpick inserted, comes out clean.
Since this is a crustless version of quiche, I added a small salad of wilted arugula on top, just to add something extra. Cook a 1/2 tsp of minced garlic in 2 tbsp olive oil. Whisk while warm with 1 tsp of vinegar, salt and pepper. Toss the arugula in the warm dressing with some sliced black olives and finish with some crumbled feta.
